2 cups cooked quinoa
2 Persian cucumbers diced
2 medium tomatoes diced
1 cup chopped Italian parsley
1 cup chopped fresh mint
1 cup sliced green onions
1/4 cup olive oil
1/4 cup lemon juice 2 tsp salt
1/2 tsp freshly ground pepper

Quinoa Tabouleh. Instead of using traditional Bulgur, decided to switch to the quinoa. Actually I like the nutty taste and the best part it’s gluten-free. #quinoa #glutenfree #healthyfood #mediterraneanfood 2 cups cooked quinoa 2 Persian cucumbers diced 2 medium tomatoes diced 1 cup chopped Italian parsley 1 cup chopped fresh mint 1 cup sliced green onions 1/4 cup olive oil 1/4 cup lemon juice 2 tsp salt 1/2 tsp freshly ground pepper * Place all the ingredients in a large bowl * Add lemon juice, olive oil Salt&Pepper and mix well. * Transfer to the serving serving dish and serve * If you’re making ahead hold the salt until ready to serve.
