INGREDIENTS:

1 package of pelmeni
1 5 ounce package of power green salad mix or baby spinach
1 10 ounce cherry or grape tomato cut in half
1 Jalapeño seeds and veins removed and chopped (optional)
4 Green onion sliced
2 Cloves garlic chopped
1/2 cup chopped Italian parsley
3 Tbsp olive oil


COOKING INSTRUCTIONS:

  • Cook pelmeni according to instruction on the package
  • In a large sauté pan add olive oil and garlic sauté on low heat
  • Add tomatoes and green onions Salt & Pepper sauté 2-3 minutes
  • Add pelmenies and power greens, mix until wilts
  • Sprinkle chopped parsley and parmesan cheese before serving
